“Natural” Chicken Versus Organic: How to Decide Which to Purchase

Use this as a guide to help you make the best decision for you and your family

  1. Organic chicken is obviously more expensive. If you cannot afford organic chicken, look for local farms. Many use organic practices but do not pay for the certification since they are small operations. If you eat a lot of meat and poultry, you may want to consider buying these foods organic due to the high GMO and antibiotic content. 
  2. No chicken in the US can be given hormones legally. This is all chicken, organic and non-organic. 
  3. Antibiotics are added to the feed of non-organic chicken’s b/c of the close quarters they live in and thus the risk of them spreading infection and disease. Have you ever seen how these chickens live and the inhumane environment they are in?   4. Because non-organic chickens are given antibiotics in the feed, this can lead to drug resistant bacteria which can become an issue when you have a bacterial infection and your antibiotic won’t work. This can also lead to drug resistant bacteria in the chicken.
  5. Organic chicken contains more omega 3 EFA’s (essential fatty acids). This is because of the vegetation/insects that they get to eat. A grain based diet is higher in omega 6 EFA’s which leads to systemic inflammation in your body. (we need omega 3’s and omega 6’s and we need to get them from food or supplementation but balance is important.)  Most people tend to get too many omega 6’s in the diet and too little in the way of omega 3’s-you want to reverse this ratio.
  6. Organic chicken gets to eat insects and vegetation. Organic chickens eat a diet of organic feed and due to access to pasture also get to eat bugs and insects. Chicken that is non-organic is typically fed a GMO grain based diet and does not get these other natural foods into their diet. This GMO grain based diet in turn can then affect your health when you consume these foods on a regular basis. 
  7. Natural: This word is essentially meaningless. Most meats qualify for this such as beef, poultry and eggs. It is a meaningless adjective that just means that the product is minimally processed and no artificial flavoring, color or preservatives are added AFTER slaughter.  (The harm is done when the chickens are alive by adding in GMO feed, antibiotics and in the case of beef, hormones). 
  8. Outdoor space: Organic chicken is required to have a space. Free range a meaningless term here as the chickens may just have outside access of a small slab of concrete.  Organic chicken must have pasture access.  More than likely your small local farmer is going to be able to provide more pasture access than the large organic famer.   Either way, this is better for the chicken and results in a less stressed and healthier bird.  The confined chickens do not have room to roam, do not get sunlight, fresh air, and are stressed due to the living conditions and treatment.  They are also often injured due to the over- crowded space.

Herb Seasoned Chicken Legs

Herb Seasoned Chicken Legs

Ingredients

  • Roughly 6-8 chicken legs with skin on
  • ¼ cup cilantro (or one small bunch)
  • ¼ c. parsley (or one small bunch)
  • 2 cloves garlic
  • 2 T. fish sauce
  • ¼ c. lemon juice
  • ½ inch piece of ginger root sliced
  • 1 shallot sliced
  • 2 T. avocado or coconut oil
  • 2 T. coconut aminos
  • 1 T. honey
  • 2 T. coconut milk

Directions

  1. Line a baking dish with parchment and layer in the chicken legs. Preheat oven to 370 degrees F.
  2. Place all other ingredients into a food processor and pulse until everything is chopped and incorporated.
  3. Pour sauce evenly over the chicken. It is not a thick liquid so you may need to pick up some of the herbed liquid and place it on top of the chicken. 
  4. Bake for 30 minutes. Flip over and spoon some sauce on the chicken and cook for another 30 minutes.  The chicken should have a nice brown color to it.  There should be some sauce left at bottom of pan-if so, rub the chicken legs in this before removing for extra flavor. 
  5. Enjoy hold or cold!

Note: I didn’t have non dairy milk one time so  I used goat milk kefir-still tasted great!  Try adding in or swapping out for other herbs you have on hand.

Chicken Asparagus Roll Ups

Chicken Asparagus Roll Ups

Gluten free

This was easier to make than I thought and good!

Ingredients

  • 4 organic chicken breasts (flatten them out or slice thin)
  • ½ cup mayo (I like Primal Kitchen mayo b/c it is soy and canola free-it uses avocado oil)
  • 3 T. Dijon mustard
  • 1 T. lemon juice (not from concentrate)
  • 2 t. dried tarragon (or spice blend of choosing for chicken)
  • s/p
  • 16 spears asparagus
  • 4 ounces grass fed cheese (or opt for vegan cheese or omit) (if you are casein sensitive you may be able to use goat cheese)
  • 1 cup gluten free bread crumbs

Directions

  1. Preheat oven to 425. Soften asparagus by steaming in steamer basket for several minutes (or cook on high in microwave for one minute)
  2. Flatten your chicken breasts and lay them out on a parchment lined baking tray
  3. Blend sauce ingredients together (mayo, mustard, lemon juice, tarragon, s/p)
  4. Spread some sauce onto each chicken beast then place some cheese on the chicken and then asparagus (you may need to cut your asparagus into halves or thirds). Use one half of the sauce mixture and save rest for the top of the chicken
  5. Roll up the breast and tuck the ends underneath
  6. Spread more sauce on the tops and then sprinkle with bread crumbs.
  7. Bake for 25 minutes

Second Recipe of Christmas: Chicken Curry

Chicken Curry

chicken-curryGluten free, Dairy free, serves 6

This is a simple, great tasting and quick meal to make.  We make this often in our house and we usually have enough for another day.  Serve this with basmati white rice and a salad. 

 

Ingredients

  • 2 lbs. boneless chicken breast cut into chunks (org. preferably)
  • Dash salt and pepper
  • 1 ½ T olive oil
  • 2 T. curry powder
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 14 ounce can of coconut milk
  • 1 lg. box of diced tomatoes (26. 46 ounces)
  • 1  small can tomato sauce (6 oz.)

Directions

  1. Season chicken with salt and pepper
  2. Heat oil in pan and add curry and stir off and on for 2 min at med high heat. Add in onion and garlic and stir to coat with the curry for about 1 min.  Add the chicken and toss to coat.  Reduce heat to medium. Cook 7 to 10 minutes. 
  3. Pour in coconut milk and tomatoes and paste.  Stir to combine. Cover and simmer for 30 to 40 minutes.

Note:

  • I buy boxed tomatoes so that I limit the amount of cans that I use as much as possible. 
  • I buy my spices in the bulk section of the store and then place them in spice jars that I have cleaned out to save some money. 
  • We like a lot of extra sauce and this ends up being kind of soupy rather than thick.  So if you don’t like it that way, then use only half the box of chopped tomatoes.

Lemon chicken: An Easy, Healthy Week Night Dinner

Lemon Chicken

Gluten free, dairy free, paleo

Serves 4

I love this dish-so easy to make for a weeknight dinner and taste so good!  You probably have all the ingredients you need at home.

Ingredients

  • 4 boneless chicken breast pounded thin (personally I don’t do this-instead I slice my thick chicken breasts so that they are thinner)
  • ¼ c. cornstarch, or potato starch (if using corn starch use non GMO brand)
  • ½ stick grass fed butter or ghee if dairy free
  • 1/3 c. dry white wine
  • 2/3 c. chicken broth (even better-use homemade bone broth)
  • Juice of half a lemon (or bottled pure lemon juice)
  • ½ t. fresh thyme minced (or dried if not fresh on hand)
  • s/p to taste

Directions

  1. Dredge chicken into cornstarch and shake away excess
  2. Melt butter in pan over med. Heat and add chicken
  3. Cook 5 min. each side until golden brown
  4. Remove chicken and set aside
  5. In the same pan, add wine, broth, lemon juice, salt, thyme, pepper, and whisk until blended.  Adjust sauce thickness as desired with water or additional cornstarch. 
  6. Bring to boil then return chicken to the pan. Lower heat and cook about 5 minutes
  7. Serve with basmati white rice or cauliflower rice and a salad.

Tip: use the left over in a salad to take to work the next day or slice thinner and wrap in gluten free tortillas with veggies to pack for a school lunch.
