Pumpkin Mousse

This simple, quick and delicious recipe is gluten free and vegetarian friendly, (paleo option), and makes a great fall holiday dessert

Personally I am a terrible pie crust maker, especially with a gluten free pie crust.  I make this instead and save calories too by skipping the crust! Make it fancier than the one in the picture for the holidays by layering it with organic whipped cream or coconut cream and top with a sprinkle of nuts and pumpkin pie spice 

Ingredients

  • 1 cup plain goat milk kefir (you can substitute plain or vanilla yogurt for a sweeter version or for dairy free try coconut nut yogurt, almond yogurt, etc.)
  • 1 15 ounce can of pumpkin
  • ½ t. pure vanilla extract
  • ¼ cup of pure maple syrup
  • 1 t. pumpkin pie spice
  • ½ t. cinnamon 
  • Optional: 1 cup of heavy whipping cream whipped or the solid portion of canned coconut milk whipped

Directions

  • Blend all ingredients in a bowl. Spoon into 4 serving dishes. You can serve this right away or chill to allow it to thicken.
  • Optional: serve/layer with heavy whipping cream or coconut cream and top with pecans or walnuts and shredded coconut

Pumpkin: Is high in beta carotene so great for vision, rich in fiber so keeps you full longer and helps sustain you and wards off cravings. Like other orange foods  pumpkin is rich in beta carotene and helps to fight off cancer, its antioxidant properties support healthy and youthful looking skin, rich in potassium, a needed electrolyte, and rich in vitamin C to support immune health. 

Goat Milk Kefir:  Those with casein sensitivity can often tolerate goat milk products.  Kefir is rich in probiotics which support the microbiome and your gut health.  

Cinnamon: This is useful to help lower blood sugar and has heart health benefits.  It is rich in antioxidants, can reduce inflammation, good for brain function and can help lower your cancer risk.
