Almond Butter Protein Bites

Soy free, dairy free, nut free option, egg free, gluten free

I poured this batter into mini molds and found this to be a great snack and mini treat after my runs.  It is sweet enough too that your kids may like this in their lunch box as a treat instead of processed sugary snacks!

Ingredients

  • 1 c. almond butter (don’t buy the ones freshly made in the store for this recipe, buy from the jar). You can also try sunflower seed or other nut butters.  (I used crunchy almond butter)
  • 4 T. organic virgin, cold pressed unrefined coconut oil melted
  • 2 scoops of vanilla protein powder
  • 2 T. raw local honey

Directions

  • Blend all ingredients until fully incorporated. Pour into molds or into a pan lined with parchment paper.
  • Freeze for at least one hour. Cut or press out of molds and store in fridge until ready to eat.

Note: If you are putting this into a lunch container, just make sure you have a frozen water in it or an ice pack as the bites may get too soft otherwise.
