Brussel Sprout Slaw Salad

 

This is a very pretty side dish to serve for the holidays but taste great enough to make it much more often! I made a small batch to sample and ended up eating the entire amount that day.  

Ingredients

  • 12 ounces shredded Brussel sprouts (buy pre-shredded or shred in food processor) I used a food processor as I like it more finely shredded than what you find pre-shredded in the bag. 
  • ¼ c. pomegranate seeds (buy frozen)
  • 1 organic apple with skin on, cut into match sticks
  • 2 shallots chopped
  • ¼ c. chopped roasted pecans or walnuts (I used walnuts) (omit if needed or try roasted sunflower or pumpkin seeds)

Dressing

  • 4 T. EVOO
  • 2 T. Apple Cider Vinegar, raw unfiltered 
  • 2 tsp Dijon mustard
  • 1 tsp. maple syrup
  • dash salt 

Directions 

  1. Mix all the slaw ingredients together in a large  bowl.  
  2. Mix the dressing ingredients together in a jar with a lid and shake to blend.  
  3. Pour dressing over the slaw and mix to blend.  Serve right away or store in fridge for later.

Apple: Fiber rich, antioxidant rich, eat the skin for greater benefits, eat organic only due to high pesticide contamination, contains a phytonutrient called quercetin for seasonal allergies, has anti-inflammatory benefits.  

Shallot: in onion family and closely related to garlic, more antioxidants than onions, a bit sweeter, good for allergies b/c of anti histamine effects

ACV:  Apple cider vinegar is considered a probiotic, it is good for low stomach acid, can help lower blood sugar, has anti bacterial properties. Choose ACV with the “mother”. The bottle should say raw and unfiltered. Braggs is a good brand of choice.
