Lasagna

Gluten-free, Dairy-free

This recipe is simple to make and delicious for a fall evening. Serve with salad.  It tastes delicious even days later. I thought the noodles would get tough and dry, but they did not, as they stayed moist.

For this recipe, I used non-dairy shredded cheese.  My family liked it with this, but non-dairy cheese will not melt into a gooey mess.  I have also added a nutritional yeast option for the cheese.  I personally have not tried it this way yet and want to when I make it next time. 

Ingredients

  • 2 T. avocado oil (or coconut oil)
  • 1 medium onion chopped
  • 3-4 cloves garlic minced
  • 1-pound grass-fed beef for bison
  • 1 ½ t. Italian seasonings
  • 2-3 cups chopped vegetables (see note)
  • 4 cups marinara-I used one large jar, but you may want to use more
  • 6 GF lasagna noodles cooked (if you do a third layer, cook 9 noodles)
  • One bag dairy-free mozzarella cheese or use df option below

Non-Dairy Cheese Option

  • ¼ cup nutritional yeast
  • Dash salt
  • Cauliflower rice

Blend all together and use in place of the bag of non-dairy cheese

Directions

  1. Cook the lasagna noodles according to the directions. (You could use more than 6 noodles but I am not a huge carb fan, so this was plenty of noodles but if you want an extra layer, than add 3 more noodles to the pot)
  2. In an 8×8 pan, spread a little of the marina on the bottom.
  3. Cook the onion and garlic in the oil until the onion has softened. Add in the meat and cook through. Add in the 3 cups of the sauce and the vegetables. 
  4. Place 3 of the noodles along the bottom of the pan. Top the noodles with the meat, vegetable mixture and then cheese.  (Here you can add some sauce too if you want).  Place another layer of noodles, meat/vegetable, and cheese. 
  5. Bake at 375 for 40-50 minutes uncovered.

Notes:

  • The first time I made this I used chopped broccoli and shredded carrots. My family did not like the carrots in it, so the next time I used cauliflower rice and chopped broccoli which they preferred
  • This really filled my pan and I did not use all of the meat, veggie mixture. I put some aside and just ate it as is. You may want to try using a larger pan than I did.
