No Bake Energy Bites

Makes 12 to 15 balls roughly

Gluten, soy, dairy, free 

This is a quick and easy favorite in our house.  Great to keep in the freezer to have on hand for when hunger hits and there is nothing to eat!  These make a healthy treat in your child’s lunch, and for an after-sport fuel.

Ingredients

  • ½ c. almond butter (or other nut butter of choice)
  • 1 c. rolled oats (preferably organic and gluten free)
  • 1/3 c. local raw honey (or pure maple syrup)
  • 1/3 c. dark chocolate chips (Enjoy life is a great brand or Lily’s)
  • 2/3 c. coconut flakes
  • ½ c. ground flaxseed (buy whole and grind yourself)
  • 1 tsp. pure vanilla

Directions

Stir together all the ingredients until well combined.  Roll one tablespoon using wet hands, otherwise it will stick to your hands.  You can roll each ball in chocolate, shredded coconut, or cacao after if desired.  Store in fridge to harden.  Store the ones you are not eating right away in freezer.  These will last one week in fridge, if they last that long! 

Notes

  • Buy your nut butter in a jar for this recipe, not the freshly ground nut butters from health stores. While the second is a healthier option, it tends to be a bit too dry for this recipe.
  • Oats are a gluten free food, however, there is cross contamination and can contain traces of gluten.
  • I like Enjoy Life for dark chocolate
  • Buy whole flaxseeds and store in fridge or freezer. Grind only the amount you need. When you buy ground flax, the oils in it, more than likely, have already gone rancid.  This rancidity contributes to inflammation in the body.
