One Skillet Quinoa and Beans

This recipe is so simple and fast to make.

This protein rich meal is great for that rushed weeknight when you need to put a healthy meal on the table and fast! I love that it has two vegetarian protein sources.

Ingredients

(Quinoa, beans, corn and tomatoes simmering on stovetop)

  • 1 T. avocado oil
  • 2 cloves garlic minced
  • 1 can black beans, rinsed and drained (see notes)
  • 1 can fire roasted diced tomatoes
  • 1 cup quinoa rinsed (if not pre-rinsed)
  • 1 small bag of frozen organic corn (don’t need to defrost)
  • 1 cup bone broth (or organic chicken, beef or vegetable broth)
  • 1 t. cumin
  • s/p to taste
  • 1 avocado diced
  • 1 small bunch cilantro chopped
  • Optional: one -pound grass fed ground beef.

Directions

  1. Heat the oil in a large skillet. Add the garlic and sauté over medium high heat for about a minute
  2. Add in the black beans, tomatoes, corn, quinoa, cumin, s/p and broth into the pan
  3. Bring to a boil, then reduce heat to low and simmer with lid on for about 20 minutes or until the quinoa is fully cooked.
  4. Optional: if using the ground beef-cook in a separate skillet until fully cooked through. Break up the ground beef into small pieces as it is cooking. Add the cooked ground beef to the quinoa blend.
  5. Top with diced avocado and cilantro and serve with a salad on side.

Notes

  • I try to reduce my use of cans so if you can, cook black beans in advance and store them in freezer and just add to pan right from freezer. Otherwise, it is also to stock up on some canned beans for quick weeknight healthy meals.
  • Pre-rinse your quinoa if the bag does not say pre-rinsed or if you are buying it from bulk bins. I added probably a half cup more quinoa to this recipe.
  • I honestly would have liked more beans in this recipe next time.
  • If adding the ground beef, I found that this recipe needed more broth and more cumin.
