Roasted Red Pepper Hummus
A very creamy hummus-so good you can eat it off a spoon!
Ingredients
- ¼ c. tahini
- 1-2 jarred roasted red peppers chopped
- One can of garbanzo beans
- ¼ c. lemon juice (not from concentrate)
- 3 T. of the liquid leftover from canned beans (or use water)
- 2 T. EVOO
- ½ t. cumin
- One clove of garlic minced
Directions
- In a food processor, add the tahini and lemon juice. Blend for one minute
- Add in the EVOO, garlic, and cumin, and blend for one minute
- Add in half the drained beans and blend for one minute
- Add the other half and liquid as needed-I; used 3 T of the juice from the canned beans
- Add in chopped pepper. Reserve a small amount of the pepper to sprinkle on top.
- Store in containers in the fridge for up to a week. It freezes well for later use. Serve with veggies or crackers.
Makes a healthy fiber-filling snack.
The trick is to process it thoroughly to get the hummus creamy.
