Swedish Meatballs

This makes a great protein portion of a meal or keep in a crock pot for a pot luck event. This is a healthier version of the traditional meatball dish. Healthier does not have to mean lacking in taste. On the contrary, many healthy dishes have many delicious flavors that you don’t get with bland cooking and fast food meals.  

Gluten free, soy free, dairy free option, nut free option, paleo option 

Ingredients

  • One- pound grass fed ground beef AND one- pound organic pork (you can try all beef or swap turkey for the pork)
  • 1/3 c. almond meal or gluten free bread crumbs (See note below)
  • 1 pasture raised egg
  • 1 medium onion chopped fine
  • 1 t. ginger minced or powdered ginger
  • ½ t. nutmeg
  • s/p to taste
  • 1 T. avocado oil
  • 1 14 ounce can of coconut milk full fat (see note below)
  • 1 c. beef broth or bone broth
  • 1 T. Dijon mustard

Directions

 

  1. Combine the meat through the salt and shape into meatballs. (I also swap out the herbs in this and use Italian herbs too). 
  2. Heat the oil in a skillet and add the meatballs and cook until brown on the outside.
  3. Remove from pan and drain any excess oil.
  4. Add to the pan the broth, coconut and mustard and bring to a boil. Stir to blend and cook for a minute. Add back in the meatballs and simmer for 20 minutes.
  5. Serve meatballs with sauce or place all ingredients in crock pot for buffet style event.

Note: I swap out seasonings to try new flavors, I use the GF breadcrumbs instead of almond meal but if dairy free, use the almond meal as gf breadcrumbs may contain some dairy, I don’t use the entire can of the coconut milk, just the part that has solidified.  I also use beef bone broth instead of broth.
